  1. Comenzamos cortando en trozos medianos la verdura, pelamos la patata y el tomate, lavamos las lentejas.
  2. En una olla ponemos un chorro de aceite de oliva, y sofreímos el puerro, pimiento, cebolla y ajos. Cuando esté casi cocinado añadimos el tomate, hoja de laurel y la cucharada de pimentón, y removemos rápidamente para que no se nos queme, después de 3-4 minutos de cocinar le añadimos las lentejas y removemos bien, dejamos cocinar unos minutos las lentejas para que cojan el sabor. Añadimos curry en polvo y sal.
  3. Añadimos bastante agua y dejamos que se cocine durante 30 minutos aproximadamente, vamos removiendo de vez en cuando. Cuando ya haya pasado el tiempo y las lentejas estén casi listas añadimos las patatas y rectificamos de sal y pimienta. Dejamos cocinar 15/20 minutos más para que se termine de hacer la patata y estaría listo para comer!!! Delicioso y calentito con mucho hierro ☺️
